Banana Bread with Coconut Nectar

Our coconut tree sap serves as sweetener for any cooking/baking recipe and offers a caramel like flavor. It's a great agave/honey alternative, especially helpful for people with blood sugar concerns since it is very low glycemic. You can use it to sweeten your coffee, morning breakfast, cereal, pancakes, tea or in any recipe that calls for syrup (also comes in “coconut crystals” to replace cane sugar).

GF Banana Bread with Coconut Nectar


  • 3 ripe, mashed bananas 
  • 1 tsp baking soda
  • 1 tsp pure vanilla
  • 1 tsp cinnamon
  • 3 eggs
  • 1/2 cup oats
  • 1/4 cup Coconut Nectar


Mix all in a bowl and pour into loaf pan. Bake at 350 degrees for 45 minutes

Optionally you can add in different combos (a tsp) of flax seed, chia seed, hemp seed protein powder, superfood blend and no one ever knows the difference. Can also add in some chocolate chips if desired.
