Cilantro Lime Dressing
Cilantro Lime Dressing - Recipe by Sharon @streetsmartkitchen
Six simple ingredients and five minutes are all you need until this spicy, zesty dressing is on the table and ready to serve!
Ingredients:
-
Fresh cilantro
-
Fresh lime juice
-
Extra-virgin olive oil - Always use a good quality organic olive oil. I usually keep the lime juice and oil ratio to 1:1.
-
Jalapeño pepper - Add one or two to give your dressing a kick. I like to leave the seeds in, but feel free to remove them if you’d like a milder dressing.
-
Garlic
-
Coconut Aminos - This is the secret ingredient that brightens up this dressing. A little salty, a little sweet, a little umami. Coconut Aminos balances the flavors perfectly!
Instructions:
Add everything into a food processor and blend thoroughly. It’s that simple!
-
Toss it with kale, arugula, and/ or spinach, and add some cucumber and hemp hearts. Watch in amazement at how many greens you’ll consume as you fall head over heels in love with this salad dressing.
-
It’s the perfect pairing for a Mexican style chicken salad (with black beans, shredded cheese, and grilled chicken).
-
It can even be used as a sauce or topping for a colorful quinoa Buddha bowl !
