Coconut Mochi Bars with Alive Coconut Oil & Coconut Crystals
A classic Hawaiian treat made with coconut milk and mochiko (rice flour).
All you have to do is mix and bake!

8 Tbsp = 1/2 cup Alive Coconut Oil melted
1 ½ cups Coconut Crystals
4 large eggs
1 tsp vanilla
16 oz mochiko flour
2 Tbsp Coconut Flour
2 tsp baking powder
1 can coconut cream 12 oz
1 can coconut milk 14 oz
Coconut flakes to sprinkle on top
Preheat oven to 350 degrees F, and grease a 9x13 inch baking pan.
Stir together the melted Coconut Oil and Coconut Crystals until combined. Add the eggs, one at a time, mixing well after each.
Stir in vanilla. Add the mochiko, Coconut Flour and baking powder stirring until well combined.
Pour in the coconut milk and cream and continue to stir until batter is totally smooth.
Pour into pan and sprinkle the top with coconut flakes and Coconut Crystals.
Bake for 50-60 minutes. Test with a wooden toothpick for readiness after 50 minutes.
Remove from oven and allow to cool to room temperature. Remove from pan, cut into squares and ready to serve. SOooo Good!
