Coconut Pecan Blondies
Allow us to introduce you to our Coconut Crystals Pecan Blondies! Coconut Crystals are a natural sweetener, unrefined and full of minerals. No worries, it doesn't taste like coconut so it won’t impart a coconutty flavor.
Try turning your favorite desserts into low-glycemic versions by replacing the brown or white sugar with coconut sugar. Grain-Free and Cane Sugar-Free these blondies are a delicious and healthy indulgence!"
Ingredients:
- 1 ½ cups whole wheat flour (or gluten-free flour blend)
- 1 ½ teaspoons baking powder
- 12 tablespoons butter
- 2 cups packed coconut sugar
- ¾ teaspoon salt
- 2 tablespoons strong coffee
- 1 egg
- 1 ½ tablespoons Coconut Nectar
- ¾ cup toasted pecans
- ¾ cup Chocolate Chunks
Instructions:
- Line a 9x13-inch baking pan with parchment paper and preheat oven to 350F.
- Combine the flour and baking powder in a bowl and set aside for later use.
- In a saucepan over medium heat melt the butter and Coconut Crystals together, stirring until thoroughly melted.
- Remove from heat and stir in the salt and coffee. Add egg and Coconut Nectar and whisk until well combined.
- Transfer liquid ingredients to dry and add pecans and Chocolate Chunks.
- Stir everything together.
- Transfer batter into lined pan and bake for 25 minutes or until a toothpick comes out clean.
- Allow the blondies to cool to room temperature and then pull blondies out by pulling on either side of the parchment.
- Cut into squares and serve.
