Crispy Grain-Free Cookies

Crispy Grain-Free Cookies (made with Coconut Crystals and Coconut Flour) by @monicamaydesign


  • 1/4 cup (60 grams) Coconut Flour
  • 1/4 cup almond flour
  • 1/4 cup Alive Coconut Oil, melted
  • 1/4 cup Coconut Crystals
  • 4 Dates, pitted and chopped
  • 3 organic eggs
  • 1/4 tsp vanilla extract
  • 1/4 tsp Himalayan salt
  • 1/4 tsp baking soda
  • 1/4 cup Coconut Crystals to sprinkle on top (optional)*


  • Preheat oven to 350° F.
  • In a medium mixing bowl, stir together coconut oil, crystals, eggs, and vanilla.
  • Add coconut flour, almond flour, salt, dates and baking soda until mixture is combined. It may seem a little loose at first, but the dough will stiffen as the flour soaks up the liquid.
  • Scoop dough using a cookie scoop or spoon and press into a cookie shape with your fingers.
  • For an extra crispy effect, sprinkle Coconut Crystals on each cookie and press with a spoon. (optional) 
  • Place cookies on a baking sheet and bake for 10-14 minutes, or until the bottom and edges of the cookies are golden brown. Remove from oven.
  • Allow to cool on the pan, then transfer to a baking rack till cooled completely. 
  • Store cookies in an air-tight container at room temp or in the refrigerator. Cookies will last longer (up to 7 days) stored in the refrigerator.
