Crispy Sweet and Sour Pork

Sweet’n sour pork - in no time!  Crispy Sweet and Sour Pork - Recipe by @monicamaydesign

Cook Time: 20 mins
Marinade Time: 10 minutes minimum or longer
Yields: 4 servings

Pork Marinade:

1 pound pork tenderloin (cut it into 1 inch cubes)
1 Tbsp Coconut Aminos
1 Tbsp Hoisin Sauce
1 Tbsp Arrowroot or Organic Rice Flour or Organic Corn Starch
(this lightly coats the meat and prevents it from getting tough while cooking)

Stir-Fry:

1 Tbsp Alive Coconut Oil
1 clove garlic (sliced)
1 can pineapple chunks
2 Tbsp pineapple juice
1/2 yellow bell pepper chopped
1/2 red bell pepper chopped
1/2 white onion (diced small)
1 Tbsp Hoisin Sauce

Instructions:

First cut the pork in cubes and marinate in our Coconut Aminos and Hoisin Sauce and flour of your choice. It will be ready for cooking when you have all the other ingredients chopped up.

Next, chop peppers and onions

Then sauté pork for 2-3 minutes, until thoroughly cooked and crispy
In a separate large skillet on medium heat lightly sauté Coconut Oil, bell peppers, and onion . Then add the pineapple and continue cooking for another 2 minutes, until tender.

Lastly add in the Hoisin Sauce, pineapple juice, and cooked pork and toss just before serving. Quick to prepare and sooo delicious!
