Garlic Salmon & Baked Potatoes

Garlic Salmon & Baked Potatoes with Coconut Oil

Ingredients:

  • 3 or 6 organic Russet potatoes, depending on size
  • 2 Tbsp Coconut Oil
  • 2 Tbsp Garlic Sauce
  • 3 pieces of wild fresh salmon  
  • Fresh herbs as desired (We love rosemary, sage and oregano)
  • Pinch of Himalayan Pink salt 

Instructions:

Marinate the salmon in Coconut Aminos Garlic Sauce with salt and pepper.

The potatoes need 30 minutes longer to prepare, so while the salmon is marinating, heat oven to 450 F. Wash the potatoes and slice them as seen in the image. In between the slices spread thin layers of Coconut Oil, salt and pepper. Place the potatoes on a baking sheet lined with unbleached parchment paper and bake for about 40-45 minutes (for average sized potatoes)  Tip: Test with a fork for softness after about 35 minutes.

For the salmon: Melt 1 Tbsp of Alive Coconut Oil in a skillet and brown the salmon on each side for 3-5 minutes on a high heat setting, then reduce the heat, cover and let cook for about 5 minutes longer until the internal temperature reaches 140°F.

Tastes delicious freshly made and can easily be reheated the next day. Enjoy!
