Gluten-free Coconut Cookies
Gluten-free Coconut Cookies. Recipe by Monica @MonicaMayDesign
Ingredients:

½ cup Coconut Flour

¼ cup Alive Coconut Oil, melted

¼ cup Coconut Crystals
-
3 organic eggs
-
¼ tsp vanilla extract

¼ tsp salt
-
¼ tsp baking soda
Instructions:

Preheat oven to 350° F.

Stir together melted Coconut Oil, Coconut Crystals, eggs, and vanilla into a medium mixing bowl.

Add Coconut Flour, salt, and baking soda until mixture is combined. It may seem a little loose at first but the dough will begin to thicken as the coconut flour soaks up the liquid.

Scoop dough to make balls. Place desired number of dough balls onto a baking sheet and extras can be stored in a closed container in the fridge.

Place cookies on a baking sheet and bake for 12-14 minutes, or until the bottom and edges of the cookies are golden brown. Remove from oven.

Allow to cool for a few minutes before transferring to a rack to cool completely.

Store cookies in an air-tight container at room temp or in the fridge. Cookies will last much longer (up to 7 days) stored in the refrigerator. Another option is to store the dough balls in the fridge and just bake fresh each time. Enjoy!
