Hoisin Glazed Ginger-Chicken Meatballs

Instant Pot Hoisin Glazed Ginger-Chicken Meatballs. These delicious meatballs are quick and easy to prepare and cook time is only 15 minutes.

Makes a great party appetizer or main dish nestled in a bed of rice or noodles! Heather @enjoyable_eats says: “I’m a big fan of @coconutsecretofficial. I used three of their products in this simple and healthy recipe.”

Ingredients:

1 lb ground chicken

1 tsp sesame oil

1/2 cup gluten-free bread crumbs

1/2 tsp fresh ginger, minced

1 egg

1 tsp minced garlic

Handful of thin sliced green onions

Salt & pepper to taste

Sauce Ingredients:

2 Tbsp Coconut Secret’s Hoisin Sauce

1/8 cup Coconut Secret’s Coconut Vinegar, in place of rice vinegar

1 clove garlic, minced

1 Tbsp Coconut Secret’s Coconut Aminos, in place of soy sauce

1/2 tsp sesame oil

1/2 tsp fresh ginger, minced

3/4 cup water

1 Tbsp cornstarch or arrowroot to thicken

Instructions:

In a bowl, mix together meatball ingredients until well-combined. Shape into small balls (about 22 meatballs).

Set instant pot to the “simmer” setting. Whisk all of the sauce ingredients until blended then shut the Instant pot off.

Place the meatballs in a single layer in the pot over top the sauce. Do not stir. Set Instant pot to “pressure cook” on low, “meat” setting, for 15 minutes.

After cooking stir meatballs to coat evenly with sauce. For an authentic Asian look, place meatballs on top bamboo skewer sticks and serve.
