Homemade Blueberry jam sweetened with Coconut Nectar & Crystals
In medium size pot add berries, water, and lemon juice. Turn to high heat until it starts to boil. Mix well and turn down heat to medium. Smash your blueberries down. Add vanilla and Coconut Nectar. Mixing often for 5 minutes.
Remove from heat and stir in the xanthan Gum. Xanthan Gum is a thickener so be careful not to add too much. Next sprinkle in your Coconut Crystals and stir again. Allow the jam to come to room temperature before putting into sealed glass container.
