Homemade Japchae

Homemade Japchae with Coconut Aminos & Coconut Crystals

Ingredients:

1 package of organic sweet potato noodles
1/4 cup snap peas or snow peas
1/4 cup sliced zucchini
1/4 cup sliced mushrooms
1/4 cup sliced bok choy
1/4 cup sliced yellow onion
1/4 cup grated carrots
(Add any other veggies you want!)

Sauce Ingredients:

3 Tbsp Coconut Aminos
2 Tbsp Coconut Crystals
1-2 Tbsp organic toasted sesame oil
2 tsp minced garlic

Directions:

Whisk together all the sauce ingredients until well combined. Set aside.

Cook sweet potato noodles in a pot of boiling water as directed on package (usually 6-7 minutes). Then strain the noodles and set aside.

Sauté all your veggies in a large, deep pan with a splash of a little more Coconut Aminos until all the veggies are tender. 

Add in the sweet potato noodles into the pan along with the dressing and toss until well combined. Top off with bean sprouts and sliced green onion. Enjoy!
