Peanut Butter Balls with Coconut Crystals/ Nectar

Did you know March first is Peanut Butter Lover Day? Well, we could make that every day!

Try these scrumptious no-bake Peanut Butter Balls (gluten-free, vegan, whole grain, dairy-free)

Ingredients:

  • 1 cup (256 grams) organic peanut butter (the kind with just peanuts and salt)
  • 1/4 cup (80 grams) Coconut Nectar or 1/4 cup Coconut Crystals
  • 2 teaspoons vanilla extract
  • 1 1/2 cups (135 grams) rolled oats (use gluten-free oats, if needed)
  • 1/2 cup (42 grams) unsweetened shredded coconut
  • pinch of Himalayan pink salt
  • 1 bar Peruvian Crunch Bar, chopped
  • If desired add chopped organic dates, apricots, pumpkin seeds or sesame seeds for different flavor
  • 2-4 teaspoons water or additional vanilla extract


Directions:

In a mixing bowl, stir together the peanut butter, Crystals/ Nectar & vanilla extract.
Stir in the oats, coconut and salt until well combined and then add the chopped chocolate bits.

If the mixture doesn’t hold together well when pinched together, add the additional water or vanilla, a teaspoon at a time until the mixture holds together well when pinched. (Here you can mix in your add ons)

Form 1” balls by pressing about 1 tablespoon of the mixture together.

You can roll your balls in coconut, seeds, or extra shredded chocolate

Store at room temperature for up to 3 days or refrigerate for 1 week.
