Peanut Shortbread Bars recipe by @foodmarshall. Feel free to substitute the peanut butter with any other nut-butter of choice! These yummy raw vegan bars will certainly satisfy your sweet tooth!
This recipe contain only healthy, nutritious, plant-based ingredients such as @coconutsecretofficial Coconut Flour, Alive Coconut Oil and Coconut Nectar! Recipe below:
For the shortbread crust:
⅔ cup Coconut Flour
⅓ cup Alive Coconut Oil
3 Tbsp Coconut Nectar
Method: Mix all ingredients in a bowl. Then mold into a square dish and place in freezer to harden.
For the peanut filling:
½ cup peanut butter, no salt and no oil added (crunchy variety works well)
¾ cup coconut shreds, unsweetened
¾ cup dark chocolate, chopped
⅓ cup Coconut Nectar
1 tsp vanilla bean powder
Method: Mix all ingredients in a bowl until well combined, while gently folding in the dark chocolate pieces. Press and mold over the shortbread crust layer. Place back in the freezer to settle.
For the chocolate layer:
¼ cup Alive Coconut Oil, melted
¼ cup cacao powder
1 Tbsp Coconut Nectar
Stir all ingredients together. Then pour over peanut filling. Place in the freezer to harden. To serve, slice into squares
