Mmmm. Creamy potato soup with Coconut Aminos, not even our cat can resist …
This delicious Potato-Celery Soup is really easy and satisfying. Here's our recipe:
1 medium organic spring onion (for low FODMAP use only the green parts)
4 cups organic potatoes
2 stalks organic celery
1 cup organic carrots
1 Tablespoon Alive Coconut Oil
1/2 teaspoon rosemary
1 pinch Himalayan Salt
1- 1 1/2 tetra packs of organic chicken or vegetable broth (or better still,,, for a richer, healthier stock, create your own bone broth from scratch!)
Season with Coconut Aminos to your hearts content!
Garnish with fresh organic cilantro or parsley.
Wash and chop veggies into equal chunks for even cooking. Heat a soup pot with a Tablespoon of Alive Coconut Oil, add chopped spring onions and caramelize them.
After a minute or two, add carrots, potatoes and celery. Pour broth over everything to cover the veggies. Add salt along with other favorite seasonings and bring to a boil. Sizzle on low heat for about 20-30 minutes or until vegetables are soft.
When soft, turn off heat and let stand for a few minutes 'til cool enough to puree. When creamy, boost the flavor even more by seasoning with our Coconut Aminos to taste.
Garnish with fresh herbs. For fun and extra eye-appeal, drizzle a little Coconut Aminos in pretty circles on top.
This soup reheats easily, and lasts for three days in the fridge. - ENJOY!
