Pumpkin “Molasses” Cookies without the Molasses! How is that possible? Heather @enoyable_eats says: "Simple! I replaced the molasses with Coconut Secret’s “Coconut Nectar.” It’s the perfect replacement for higher glycemic sweeteners like molasses, maple syrup and honey, yet does not have a coco-nutty flavor because it is made from the “sap” of the coconut tree, not from coconut. These cookies taste amazing! "

1 cup Coconut Secret Coconut Crystals
  • I stick butter, softened
  • 1/4 cup Coconut Secret Coconut Nectar (molasses substitute)
  • 1/2 cup organic pumpkin puree
  • 1 egg
  • 2 1/3 cups flour or gluten-free flour baking mix
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 ½ tsp ginger
  • ½ tsp nutmeg
  • 1/2 cup Coconut Crystals for rolling dough in


In a large bowl cream butter with Coconut Crystals.

Stir in Coconut Nectar and pumpkin. Mix well.

Whisk in the egg.

In another bowl combine flour, baking soda, salt and spices.

Slowly stir flour mixture into the pumpkin mixture and blend well.

Scoop dough and form into balls.

Roll balls in Coconut Crystals until coated.

Line baking sheet with parchment paper and bake at 350* for 10-12 minutes.

Delicious warm or cooled. Sooo good!
