Savory Chipotle Shrooms

Mushrooms make the perfect side dish! Quick to prepare and extra tasty with Chipotle flavored SeaSnax roasted nori and seasoned with our Coconut Aminos!

  • 1 heaping tsp minced garlic (1 large clove)
  • 12 oz baby portabella mushrooms - sliced
  • ¼ cup low sodium vegetable broth
  • 3 Tbsp Coconut Secret Coconut Aminos
  • 2 packs Grab and Go Chipotle SeaSnax
  • ½ cup sun-dried tomatoes, chopped, drained of oil, or roasted tomatoes
  • 3 sprigs thyme


In a large saucepan add vegetable broth*, Coconut Aminos and thyme. Bring to a slow boil and then use tongs to carefully remove thyme sprigs.

Stir in mushrooms and minced garlic and increase temperature to medium high. Saute for two minutes, making sure all mushrooms are coated in liquid.

Add sun-dried tomatoes and continue sauteing for an addition 2-4 minutes. Reduce heat to low and cover for 4 minutes allowing flavors to saturate mushrooms.

For the final touch, uncover and with clean hands, tear the sheets of Chipotle Seasnax in half and stir them into the mix.

Garnish with additional thyme if desired. Serve hot or room temperature.
