A special desert and a healthy treat all in one! Here’s a raw vegan dessert recipe Strawberry + Nut Bars with a yummy Chocolate Drizzle
Ingredients for the Base:
3/4 cup raw nuts of choice,
1/4 cup Coconut Flour,
2 Tbsp Coconut Secret Chocolate Chunks,
1 Tbsp Coconut Nectar,
2 Tbsp Alive Coconut Oil melted,
1 tsp vanilla extract
Ingredients for the Strawberry Cream Filling:
2 cups raw cashews (soaked in water for at least 2 hours),
2 cups fresh or frozen strawberries,
1/4 cup Coconut Nectar,
2 Tbsp lemon juice,
1 tsp vanilla extract,
1/4 cup - 1/2 cup coconut milk, unsweetened (if desired for smoother consistency)
Ingredients for the garnish with Chocolate Drizzle:
1/2 cup Alive Coconut Oil melted,
1/2 cup cocoa powder,
2 Tbsp Coconut Crystals,
A pinch of salt
Combine the base layer ingredients in a food processor. Then mold into a lined 8x8 inch square pan. Place in freezer to set.
For the strawberry cream layer blend all ingredients until smooth and creamy. Using a spatula, spread the strawberry layer over the base layer. Place back in the freezer to set.
To make the chocolate drizzle, simply whisk together all ingredients. Pour over the strawberry layer. Place back in the freezer for at least 30 min.
To serve, slice into squares and garnish with coconut flakes, Coconut Secret Chocolate Chunks, and rose petals.
