Vegan Brownie Cookies
The sweet scent of cookies baking in the oven is the perfect yummy treat while staying at home! Here's a delicious recipe for vegan, low glycemic, gluten-free brownie cookies made with our no cane sugar Chocolate Chunks.
Makes 12 cookies.
Ingredients:
- 1 cup Coconut Secret Chocolate Chunks
- 3 Tbsp Coconut Oil or vegan butter
- 1/2 cup gluten-free flour blend (or optional unbleached all-purpose flour if gluten is not an issue)
- 1/4 tsp baking powder
- 2 flax eggs (2 Tbsp ground flax + 6 Tbsp water)
- 1/4 cup nut butter of choice
- 1/4 cup Coconut Crystals (coconut sugar)
- Additional 1/2 cup Coconut Secret Chocolate Chunks
Instructions:
- Melt oil or butter and Chocolate Chunks together, stir until smooth. Allow mixture to cool five minutes.
- During the five minutes, make flax egg and set aside to thicken.
- Preheat oven to 350.
- Add flour, baking powder, nut butter and Coconut Crystals to melted chocolate mixture.
- Add thickened flax eggs. Combine well.
- Fold in 1/2 cup chopped chocolate chunks. Optional: add chopped nuts.
- On a parchment lined baking sheet, scoop two tablespoons of cookie mixture for each cookie and bake six of them at a time for 7-8 minutes.
- Allow cookies to sit on the baking sheet, at room temperature, for five minutes then transfer to cooling rack, then store in a covered container.
Note: If you want to make traditional brownies, double recipe, add batter to 9x9 baking dish coated with oil and bake for 25-30 minutes at 350; until a toothpick comes out clean.
