Vegan Brownie Cookies

The sweet scent of cookies baking in the oven is the perfect yummy treat while staying at home! Here's a delicious recipe for vegan, low glycemic, gluten-free brownie cookies made with our no cane sugar Chocolate Chunks.

Makes 12 cookies.

Ingredients:

  • 1 cup Coconut Secret Chocolate Chunks
  • 3 Tbsp Coconut Oil or vegan butter
  • 1/2 cup gluten-free flour blend (or optional unbleached all-purpose flour if gluten is not an issue)
  • 1/4 tsp baking powder
  • 2 flax eggs (2 Tbsp ground flax + 6 Tbsp water)
  • 1/4 cup nut butter of choice
  • 1/4 cup Coconut Crystals (coconut sugar)
  • Additional 1/2 cup Coconut Secret Chocolate Chunks

Instructions:

  1. Melt oil or butter and Chocolate Chunks together, stir until smooth. Allow mixture to cool five minutes.
  2. During the five minutes, make flax egg and set aside to thicken.
  3. Preheat oven to 350.
  4. Add flour, baking powder, nut butter and Coconut Crystals to melted chocolate mixture.
  5. Add thickened flax eggs. Combine well.
  6. Fold in 1/2 cup chopped chocolate chunks. Optional: add chopped nuts.
  7. On a parchment lined baking sheet, scoop two tablespoons of cookie mixture for each cookie and bake six of them at a time for 7-8 minutes.
  8. Allow cookies to sit on the baking sheet, at room temperature, for five minutes then transfer to cooling rack, then store in a covered container. 
Note: If you want to make traditional brownies, double recipe, add batter to 9x9 baking dish coated with oil and bake for 25-30 minutes at 350; until a toothpick comes out clean.
