One serving of our flour contains 40% of your daily dietary fiber needs, which, by comparison, is double the fiber of wheat bran. Fiber aids in digestive health, and helps balance blood sugar levels. It is also very low in carbs, and actually lowers the calorie content and glycemic index of food.

Due to the highly absorbent nature of coconut flour, you may need to adjust the moisture ratio in your recipe.
If using 100% Coconut Flour add eggs at a ratio of 4 eggs to 1 cup flour. Or increase the liquid content of the recipe by adding an extra 1:1 ratio of liquid per equal amount of flour.
A second option, instead of adding eggs or liquid, is to blend coconut flour with other gluten-free flours at a ratio of 1⁄4 cup coconut flour to 3⁄4 cup alternate flours.
